Meet Chef Mia

Welcome, I’m Chef Mia, founder of WildSpice. I've spent more than 15 years transforming healthy cooking into extraordinary dining experiences that nourish the body and delight the senses.

My journey was quite unconventional: from graduate studies at Princeton University to six years traveling the globe playing poker professionally. That path became a pursuit of peak performance that led me to focus on optimizing nutrition to ensure I perform and feel my best.

Along the way, I immersed myself in the food cultures of four continents, falling in love with the diverse spices, herbs, and culinary techniques, weaving them into a healthy, upgraded style that is adventurous yet crowd-pleasing.

The Art of Nourishment: Bespoke Farm-to-Table Chef Cuisine

Too often, everyday meals are designed for survival, not optimal nutrition or flavor. Rather than following the culinary school route, with its reliance on excessive fats, salt, refined sugar, and processed additives, I charted my own course through years of experimentation and refinement, drawing from traditional methods, modernist techniques, and superfoods, to craft cuisine that is elevated, flavorful, and restorative.

I let organic and wild plants take center stage, not only for their unparalleled taste but also for their proven role in longevity, stress reduction, and overall well-being. One of my greatest pleasures is bringing the best of the Pacific Northwest harvest to my clients’ tables, from chanterelles and huckleberries to purple asparagus and heirloom tomatoes.

Unlike restaurant chefs confined to a single repertoire, I develop new recipes constantly, tailoring menus to both the season and each client’s unique lifestyle and preferences — whether gluten-free, dairy-free, vegan, low sodium, or adventurous omnivores. This flexibility allows me to craft bespoke weekly meals for high-net-worth individuals and busy families as well as curate unforgettable private dinners for special occasions, retreats, mountaineering adventures, and team-building, turning food into a catalyst for connection and renewal.

In addition, I operate my own hydroponic farm growing nutrient-dense microgreens and rare heirloom herbs you won’t find in stores. This allows me to offer a farm-to-table experience that is exclusive and memorable.

Beyond private engagements, I’ve been invited as guest chef at esteemed organizations such as the Woodstock and Oregon City Farmers Markets to teach the community about seasonal, health-forward cooking.
