Want to know an easy way to have fun eating healthy? Add more color to your plate with purple foods! They’re packed with vitamins and antioxidants, including anthocyanin, that fight free radicals and boost your health. From the lush hues of purple cauliflower to purple sweet potato and red onions (which are really purple), there is an abundance of beautiful and nutritious produce to choose from.
Here are the top 5 of my clients' favorite purple foods:
Purple cauliflower: Roast or prepare like you would white cauliflower, it's amazing at caramelizing and showcasing flavors from a wide range of spices and herbs.
Red onions: Unlike what a lot of the onion recommendations/guides on the internet claim, red onions are by far the sweetest and most flavorful of the popular onion varieties in my experience, even more so than sweet or Vidalia onions. Get them from from the farmers market to enjoy the green tops too!)
Wild blueberries: Even more nutritious than cultivated blueberry, you can usually find them in the freezer section of grocery stores. Enjoy for breakfast everyday and add to your salads.
Purple asparagus: a sweet and crisp spring treat.
Purple sweet potato: naturally sweet with a rich velvety texture, it's great for snacking throughout the day.
Bonus: Purple carrots: beautiful, sweet, and crunchy, without as much of the sharp "carroty" flavor of orange carrots.
