With summer upon us, I've got a fresh dining tip to keep your meals healthy and delicious: try vegetable noodles! Zucchini noodles (zoodles), cucumber noodles, carrot noodles, and more are not only fun to make but also a perfect way to enjoy the bounty of summer without the heaviness and inflammation associated with traditional pasta.
Simply use a julienne peeler, Vegetti, or a spiralizer to make easy and uniform noodles. You can enjoy cucumber noodles fresh, while I prefer to lightly saute sturdier veggie noodles for a softer texture and better digestibility.
