Welcome, I’m Chef Mia! I've spent most of my life transforming wholesome, nutritious ingredients into flavorful meals. It started with an unconventional journey: I traveled the world playing poker professionally for 6 years. It was a quest for peak mental and physical performance that led me to focus on optimizing my diet to make sure I perform and feel my best. I also fell in love with a diverse range of spices, flavors, and culinary techniques from around the world.
Over the years, I’ve realized that too much of our everyday foods are merely survival food, not designed for optimal nutrition or taste. With today’s incredible access to healthy ingredients and modern cooking methods, I saw an opportunity to transform everyday dining into extraordinary nourishing experiences. Food can be both scrumptious and packed with nutrients, far beyond what you typically find at home or in most restaurants.
I’ve also discovered that for longevity, reducing stress, and overall health, making organic plants the star of your meals—and keeping things gluten-free and dairy-free—works wonders for me and many others.
I have had the honor of being invited as the guest chef at various farmers markets in the Portland and Oregon City areas, where I conduct cooking demos to showcase fresh, flavorful local cooking.

My travels have taken me to four continents, from the vibrant markets of the Caribbean to the bustling streets of East Asia. Each place has given me countless culinary inspirations and invaluable lessons about flavorful cooking, so that I can make each dish an epicurean adventure. My mission is to create healthy meals that are as satisfying as they are nourishing, moving far beyond the usual salads and into a world of exquisite, flavor-packed dishes.

I approach cooking with care, knowledge, and love so that your meals gives you better energy and health to enjoy life. Every ingredient matters. I steer clear of the traditional high-fat, high-salt, high-sugar culinary school cooking approach, choosing instead to focus on fresh, wholesome ingredients. The result? Meals that taste incredible AND help you feel great.
When I’m not in the kitchen, you can find me tending to my microgreens farm, harvesting fresh fruits from local farms, and foraging for mushrooms in the wild.
